Slow Cooker Beef Goulash

I love my slow cooker, just throw all the ingredients into the pot in the morning then, after a busy day, dinner is ready in the evening. The house is also filled with some amazing aromas which is fantastic to return home to.

This is a very easy recipe and any leftovers can be frozen ready for another busy day. I like to serve this accompanied by a green vegetable such as broccoli.

Slow Cooker Beef Goulash

Ingredients

  • 1 tbsp olive oil
  • 400g lean stewing steak, diced into large chunks
  • 1 onion, peeled and roughly chopped
  • 1 garlic clove, peeled and crushed
  • 1 tbsp hot paprika
  • 500g new potatoes, halved
  • 2 red peppers, deseeded and cut into chunks
  • 300ml Beef stock
  • 500ml passata
  • handful of fresh parsley leaves, chopped
  • sea salt and freshly ground black pepper
  • yoghurt or soured cream to serve

Heat the slow cooker if necessary. Heat the oil in a large non stick pan (or slow cooker pan if removable). Fry the onion, garlic and beef until the beef starts to brown.

Sprinkle over the paprika, then add the potatoes, pepper, stock and passata. Bring up to the boil then transfer to the slow cooker. Cover and cook on low for 8-10 hours, until the beef and potatoes are tender.

Stir in the parsley, season to taste and serve with a dollop of yogurt.
